Kentucky Style Wings

When I first saw the name of this recipe I thought it would be a battered recipe, but was surprised to see it was a deep-fried recipe(my fav) with a sauce that incorporated bourbon, how could you go wrong…

Ingredients:

Wings
Veg oil
unsalted butter
Frank’s Hot Sauce
pancake syrup
bourbon

Step 1: Preheat oil to 190C
Step 2: Cook the wings in the oil for 10-12mins until super crispy
Step 3: Combine all the ingredients in a bowl and mix well

Step 4: Once the chicken is cooked place in the bowl with mixture and toss until completely coated.

Christmas Special

Christmas day was really special for me last year, I had loved ones all around me, and despite the rain we still cooked loads of chicken wings.
I prepared 5 recipes all of which were very different and all of which everyone loved.

Diane loves wings

I haven’t cooked steak Diane before but this is how I would image it would go.
Obviously using steak instead of chicken.
The brandy burning was super fun and burnt for a lot longer than I thought it would so be careful when making this dish.

The ingredients for this dish are:

shallots
dijon mustard
Worcestershire sauce
unsalted butter
Brandy

Step 1: In a skillet over a high flame cook the wings for 10-12mins until browned and cooked through

Step 2: Add shallots and cook for 1 min

Step 3: Splash the wings with brandy, Ignite and let it flame for a few minutes
Step 4: Once the flame is out simmer for 3mins
Step 5: Remove the wings from the sauce and set aside

Step 6: Add butter, mustard, Worcestershire sauce and chicken stock, simmer for a few minutes until smooth

Step 7: Server wings with the beautiful rich Diane Sauce.

Despite the appearance this dish not being great I really liked the final outcome.

Your Hot Tomato Wings

My girlfriend loved these wings despite getting a very messy face from the sauce. If you love tomato based food this one is for you.
It has a lovely kick to it thanks to the jalapeno and Franks but it is well balance with the butter and tomato…

Here are the simple ingredients….

jalapeno pepper
chilli
ground cumin
canned tomato

Step 1: heat oil in a skillet & add the wings, brown for 8mins
Step 2: add onions, jalapeno, chilli, cumin and cook fro 3mins until aromatic

Step 3: add tomatoes along with butter bring to a boil &simmer for 20mins

Step 4: Serve, Eat and be happy :-)

Beer boy Paulino Wings

Another great recipe…
Most of tasters compared the wings to the our Quick Billy’s Chile Wings.

My nephew absolutely loved them I know he’s only 2.5 years old, but he is very clever so I recommend you try these

Sante Fe Wings

Since I got my new deep fryer I can’t help myself when it comes to buffalo style wings.
These are up there with the best I’ve had, they are very very spicy and very very crispy, I highly recommend giving these ago

Cajun Wings

As of the publishing date (Oct 31st) this is the best chicken wing dish I have ever eaten.
The wings were so crispy I felt weak at the knees. The flavour was very spicy but very deep in flavour…

This is a great variation on the original buffalo wing recipe.

Making Flavoured Butters

Learning how to make flavoured butter is not difficult and could ultimately change the way you use butter with food in the future.

It’s pretty straight forward really, all you do is soften some butter (DO NOT MELT) and then mix in whatever herbs and spice you like. Lastly you roll the butter in the clingfilm and put it in the freezer.
Then whenever you need some flavour added to a dish simply cut off a little section and melt with whatever it is you making.

Original Buffalo Party Wings

Today was a great day for wings around the world!
I got interviewed by the Manly Daily and I thought it would be very appropriated to cook them a recipe with some history.
Now remember that this is one version of what some consider the original recipe that was created in The Anchor Bar Buffalo the home of the original wing.(here is the story)
Personally I like to salt my wings first they go crispier, and I like to add a little white vinegar to the butter to give them that extra kick.

Enough about me, lets get winging.

Miami Spice Wings

This was our second oven baked wing and it didn’t disappoint.
The crumb definitely could have been crunchier which let down the texture rating but the tenderness of the wing was out of this world. The balance of cajun spice in this dish was just perfect and I highly recommend giving this one a try
