Honey, I must grill wings

Having not cooked wings in over a month, I realised I had better get into gear and get back to winging it. I’ve still been eating wings at least once a week, but just haven’t made the time to cook.
I really liked this batch of wings and here is why:

Wang Tango Wings

Great recipe, I’ve mentioned I’ve started becoming a fan of recipes that have a good Ketchup balance and this one had just that

Ingredients:

veg oil
wings
garlic
onion
honey
sugar
ketchup
Worcestershire sauce
tomato paste
chili
black raisins
ground allspice
onion powder

Step 1: Heat your oven to 190C
Step 2: heat the oil onions and garlic in a medium pan
Step 3: add the remaining ingredients and reduce for about 3-5 minutes
Step 4: transfer sauce to a blender and puree until smooth
Step 5: Cover the wings in your puree and cool in the over until ready (app. 30-40 minutes)

Wings Fra “Diablo”

Interesting recipe and great idea I just felt there was too much tomato in this one, I’m probably going to try it again as I think it has amazing potential.

Ingredients:

Olive Oil
veg oil
wings
garlic
red wine
lemon juice
Fresh Basil
dried oregano
chilli
tomato puree
sugar

Step 1: In a Large skillet over a medium heat brown the wings for 10-12min
Step 2: Add the garlic, and brown further for 2mins
Step 3: Then add Wine, juice and cook for 1min
Step 4: Finally add all the remaining ingredients and cook until reduced for 10mins
Step 5: Serve on a platter

Wings Tandoori

Tandoori is one of my favourite Indian styled foods. I must admit I don’t have a Tandoor (oven used for making tandoori).
That said this dish turned out very well, but definitely felt like it was missing that magical ingredient. I hope to one day fully recreate some Tandoori Chicken the way it should be …

Ingredients:

yogurt
garlic
Fresh Coriander
fresh mint
turmeric
saffron
salt
paprika
sugar
cayenne pepper
Ground Coriander
red onion
lime juice
wings

Step 1: In a large mixing bowl, combine all the ingredients (except the wings)
Step 2: Marinade the wings for 5 hours

Grilled Mint Chicken Wings

Be prepared for these wings they take 4 hours to marinade but trust me when I say it’s worth it.
I also have 15 guests that backed this, even though some of them got more chilli than they hoped for :-)

Here is my brother taking these wings for a test run:

He seemed to be struggling with the heat…

Ingredients:

yogurt
garlic
fresh mint
ground cumin
chilli
sugar
salt
ground pepper
onion powder
cayenne pepper
wings

Step 1: Mix everything in a large mixing bowl.
Step 2: Add the wings and refrigerate for 4 hours

Step 3: Remove the wings from the marinade and cook over the bbq for 20-25mins
Step 4: Served best with friends ;-)

Sierra’s Grandma’s Secret Wings

Here is another great recipe that has also come in first at the National Buffalo Wing Festival. This time it was in the Creative category.

These are beautiful tasty and moreish and I highly recommend making them…

The ingredients are as follows:

wings
veg oil
Butter
sugar
Ketchup
garlic
onion powder
white pepper
salt
chilli
dried oregano
beer
Franks Hot Sauce

Step 1: Heat the oil to 190C, and cook the wings for 10-12min until crispy

Step 2: Melt the butter and sugar over a medium heated stove
Step 3: Add the remainder of the ingredients and bring to a boil, then simmer for 2-3mins.

Where’s my John Wayne Wings

Ok so I lied the Spicy Chicken wings weren’t the last in the old house, these were, I guess I just needed more wings ?

Ingredients

Wings
veg oil
onion
garlic
sugar
apple cider vinegar
Worcestershire Sauce
mustard
chile powder
onion powder
garlic powder
jalapeno chile

Step 1: Preheat the oven to 190-200C
Step 2: In a large skillet brown the wings over a medium heat on the stove top.
Step 3: Remove the wings from the skillet and place aside
Step 4: Add onion, garlic to the skillet and brown for 3minutes

Step 5: Stir in the ketchup, sugar, vinegar, Worcestershire, mustard and spices and cook for about 10mins

Step 6: Add the wings to the mixture above and stir well
Step 7: Place the wings in to the oven and bake for 10mins until the sauce thickens.

Christmas Special

Christmas day was really special for me last year, I had loved ones all around me, and despite the rain we still cooked loads of chicken wings.
I prepared 5 recipes all of which were very different and all of which everyone loved.

Mama Kin’s Baked Wings

This was a lovely recipe, I like the sauce that is created at the end it has a beautiful balance of saltyness and mustard. the sesame seed oil really cuts through with the nutty hints.

This is a must try recipe and another healthy option

Step 1: mix the soy, sherry, water, sugar, garlic, ginger and chilli in a bowl

Step 2: Place the wings in the bowl and marinade for at least 1 hour
Step 3: Place the wings in the oven at 190C

Step 4: While the wings are cooking mix the mustard, cornstarch, Franks and Sesame oil in a bowl

Step 5: Once the wings are cool, combine the remaining marinade and juices with the above mixture

Bangkok on Fire Wings

I do love a recipe that involves extended marinading and my favourite cuisine; Thai.
Despite the name these were not on fire hot, but definitely had a slight bit to them, and the best part about cooking things wings was sharing them with my family and friends…

Here is everything you will need to make these wings:

Ingredients:

coconut milk
hot sauce
fish sauce
rice wine vinegar
lime juice
soy sauce
sugar
curry powder
fresh garlic
chilli
wings
