5 Marinaded Wing Recipes

I did things a little different this time and in order to catch up on some recipes, I marinaded 5 different styles in one night. Let’s just say it was a super wing fest.

Cricket Final Wings

After a long and great cricket season my cricket team Bones Bolters win the league at last :-)

For celebrations we did what any group of blokes would do and that was to eat great food with some cold beer.

Diane loves wings

I haven’t cooked steak Diane before but this is how I would image it would go.
Obviously using steak instead of chicken.
The brandy burning was super fun and burnt for a lot longer than I thought it would so be careful when making this dish.

The ingredients for this dish are:

Worcestershire sauce
unsalted butter

Step 1: In a skillet over a high flame cook the wings for 10-12mins until browned and cooked through

Step 2: Add shallots and cook for 1 min

Step 3: Splash the wings with brandy, Ignite and let it flame for a few minutes
Step 4: Once the flame is out simmer for 3mins
Step 5: Remove the wings from the sauce and set aside

Step 6: Add butter, mustard, Worcestershire sauce and chicken stock, simmer for a few minutes until smooth

Step 7: Server wings with the beautiful rich Diane Sauce.

Despite the appearance this dish not being great I really liked the final outcome.

Die-Hard Dijon Wings

Sun Dried Tomato Ranch Dip – (see on tv)

This is a lovely dip that will help calm down any hot wing and has a beautiful creamy flavour. Lisa from the today show lapped it up with her hands (see here)

I still find it funny that no one really understands what I am saying when I say Ranch sauce I wander if it’s my accent.

Ingredients:

sun dried tomato
mayonnaise
sour cream
shallots
dried parsley
dried dill
garlic

It’s very easy to make, simply blitz the tomato’s and add them to the rest of the ingredients and serve.
Honestly it’s that simple.

Play around with ingredients you can really use anything that is nice and fresh in flavour.

Making Flavoured Butters

Learning how to make flavoured butter is not difficult and could ultimately change the way you use butter with food in the future.

It’s pretty straight forward really, all you do is soften some butter (DO NOT MELT) and then mix in whatever herbs and spice you like. Lastly you roll the butter in the clingfilm and put it in the freezer.
Then whenever you need some flavour added to a dish simply cut off a little section and melt with whatever it is you making.

As part of the Wings Across America book I’m cooking there are 6 wings butters all of which I made on the weekend and 4 of which I filmed.

Johnny Appleseed wings

I’ve never cooked with A1 sauce before and only tasted it once in NYC, so I was excited about this marinade.

Step 1 - Place everything other than the wings into a pan and saute for 5-10mins

Step 2 – Place all the ingriedents along with the wings in a container or plastic bag

Step 3 – Leave for at least 5 hours
Step 4 – Take out the fridge and leave until they back to room temperature
Step 5 – Cook on a medium heated grill or BBQ

Step 6 – See how many you can eat :-)

These wings had a beautiful deep flavour and I think the combination of cidar and steak sauce really work well together. I’m probably going to try and modify this recipe and use it for ribs so watch this space.

Antisocial Wings

WARNING, do not eat before meetings…
Seriously these wings may be beautiful to eat but they pack a huge garlic and onion punch, enough to scare anyone off.

Hot Bull Wings

As you will see in the video I was very excited about getting into the kitchen for this dish. The Medeira wine was definitely the star of show.

The complex flavors that come through in this dish really blew me away, the combination of the wine and the prosciutto really took me by surprise, as you can see I was slightly lost for words.

Appearance and texture let this dish down on the ratings I think we will see this as a common theme with Sauted wings going forward.

Darkest Secret Wings

Another day and another wing recipe this time we get adventurous and start using dark beer.

Although these wings gave me a wingasm (orgasm in the mouth brought on by eating wings) , I have to admit that the beer flavor did start to get bitter after a few wings. Perhaps I used a beer that was too dark, next time I’ll use a lighter dark beer.

The rating for this recipe turned out lower than expected due to the texture of the dish the skin got soft from the beer I found them hard to eat in the hand (very slippery). As mentioned in the video they also don’t look that inviting, but make no mistake they are very tasty.
