Cricket Final Wings

After a long and great cricket season my cricket team Bones Bolters win the league at last :-)

For celebrations we did what any group of blokes would do and that was to eat great food with some cold beer.

Wings Fra “Diablo”

Interesting recipe and great idea I just felt there was too much tomato in this one, I’m probably going to try it again as I think it has amazing potential.

Ingredients:

Olive Oil
veg oil
wings
garlic
red wine
lemon juice
Fresh Basil
dried oregano
chilli
tomato puree
sugar

Step 1: In a Large skillet over a medium heat brown the wings for 10-12min
Step 2: Add the garlic, and brown further for 2mins
Step 3: Then add Wine, juice and cook for 1min
Step 4: Finally add all the remaining ingredients and cook until reduced for 10mins
Step 5: Serve on a platter

Hot Rod Wings

This was the first time I’ve ever cooked with Chipotle peppers (dried jalapeno) so I was very excited.

This is what I have to deal with when working with friends to get tastings done…

Ingredients:

Olive Oil
lemon juice
lime juice
jalapeno pepper
chipotle pepper
chicken stock
fresh ginger
garlic
dried thyme
Franks Hot Sauce
garlic powder
onion powder
wings

Step 1: Mix everything in a large mixing bowl.
Step 2: Add the wings and refrigerate for 4-5 hours

Step 3: Remove the wings from the marinade and cook over the bbq for 20-25mins
Step 4: Served best with a cold drink

Spicy Chicken wings

We moving house and these are the last wings I’ll cook at my current address so it’s sort of good bye and thank you to this kitchen.

Ingredients:

Wings
veg oil
soy sauce
olive oil
fresh rosemary
garlic Powder
fresh lemon juice
cayenne pepper
Worcestershire sauce
Hot Sauce

Step1: Brown the wings over a medium heat a skillet for 10-12minutes.
Step2: Place all the other ingredients into a large mixing bowl and whisk well.

Christmas Special

Christmas day was really special for me last year, I had loved ones all around me, and despite the rain we still cooked loads of chicken wings.
I prepared 5 recipes all of which were very different and all of which everyone loved.

Corny Corn Wings

It was bound to happen someday that I would come across a wing that I didn’t like. This is the one. That being said I still ate all of them.
I found the molasses was too strong and the whole recipe just lacked the full combination of flavours.
The smell was not something that I could not handle.
Extra from my journal when making these reads:
“Smells horrible looks horrible I hope this works”

Step 1:Combine the everything except the flour and wings into a blender.

Step 2: lightly flour the wings, then dip them into the blended mixture

Step 3: Put them into a pre-heated oven at 200C for about 40mins

Hollywood Ginger Wings

I’ve only ever used Teriyaki when cooking fish and I loved that so was pretty excited about this recipe and it was another very easy one to make.
The flavours were deep and fresh at the same time.

Here are the simple ingredients….

wings
lime juice
lemon juice
Teriyaki Sauce
honey
fresh ginger
onion powder
Ground Cinnamon
water

DSC_0201Step 1: mix everything together in container or bag
DSC_0203Step 2: Marinade in the refrigerator for 2 hours
DSC_0205Step 3: heat the oven to around 190C
Step 4: Place wings in a 2inch dish
Step 5: Cook in oven for about 30-40mins until cooked through

Making Flavoured Butters

Learning how to make flavoured butter is not difficult and could ultimately change the way you use butter with food in the future.

It’s pretty straight forward really, all you do is soften some butter (DO NOT MELT) and then mix in whatever herbs and spice you like. Lastly you roll the butter in the clingfilm and put it in the freezer.
Then whenever you need some flavour added to a dish simply cut off a little section and melt with whatever it is you making.

Lucifer Wings

Here is another great BBQ marinade for wings.
These require 24 hours of marinade time, I actually did mine for 24hours in the fridge and then froze them for another day before cooking.

Looking at all these ingredients you would think there would be a big punching coming, when actually it was really well balanced wing.

Step 1 - All you have to do for this recipe is place everything below in a container or plastic bag.

Step 2 – Leave for at least 24 hours
Step 3 – Take out the fridge and leave until they back to room temperature

I really liked these wings, at first the lemon kick had me confused but then the chilli comes through and makes for a beautiful combination of flavours.

Grilled Summertime Wings

If you a love minty zingy Mojito, you’ll love these. They were really fresh and light wings and I can definitely see myself eating these more often. I would also recommend eating it with a nice spicy dip.

I must admit that my cooking temperature totally affected the rating of this dish. I had the heat a little too high so the wings were not as tender as they should be and I might have slightly burnt the outside of one of two of them.
