Blue Monday Wings

Once Upon a Monday night I was feeling blue so I cheered myself up by cooking these wings and no I was not naked…

Ingredients:

wings, mustard, flour, Cornmeal,onion powder, garlic powder, lime juice, black pepper, ground cumin, cayenne pepper

Down-Home Wings

My second recipe since “time-off-cooking-wings”, and I say these are not for the faint hearted.
They pack a serious mustard punch…

Ingredients:

mustard, mayonnaise, dried thyme, dried dill, cayenne pepper, black pepper, onion powder, wings

Wings Tandoori

Tandoori is one of my favourite Indian styled foods. I must admit I don’t have a Tandoor (oven used for making tandoori).
That said this dish turned out very well, but definitely felt like it was missing that magical ingredient. I hope to one day fully recreate some Tandoori Chicken the way it should be …

Ingredients:

yogurt
garlic
Fresh Coriander
fresh mint
turmeric
saffron
salt
paprika
sugar
cayenne pepper
Ground Coriander
red onion
lime juice
wings

Step 1: In a large mixing bowl, combine all the ingredients (except the wings)
Step 2: Marinade the wings for 5 hours

Step 3: Cook the wings in a pre-heated oven(190C) for 25-30min

Grilled Mint Chicken Wings

Be prepared for these wings they take 4 hours to marinade but trust me when I say it’s worth it.
I also have 15 guests that backed this, even though some of them got more chilli than they hoped for :-)

Here is my brother taking these wings for a test run:

Ingredients:

yogurt
garlic
fresh mint
ground cumin
chilli
sugar
salt
ground pepper
onion powder
cayenne pepper

Step 1: Mix everything in a large mixing bowl.
Step 2: Add the wings and refrigerate for 4 hours

Step 3: Remove the wings from the marinade and cook over the bbq for 20-25mins
Step 4: Served best with friends ;-)

Spicy Chicken wings

We moving house and these are the last wings I’ll cook at my current address so it’s sort of good bye and thank you to this kitchen.

Ingredients:

Wings
veg oil
soy sauce
olive oil
fresh rosemary
garlic Powder
fresh lemon juice
cayenne pepper
Worcestershire sauce
Hot Sauce

Step1: Brown the wings over a medium heat a skillet for 10-12minutes.
Step2: Place all the other ingredients into a large mixing bowl and whisk well.

Step3: Add the cooked wings to the mixture and coat completely

Christmas Special

Christmas day was really special for me last year, I had loved ones all around me, and despite the rain we still cooked loads of chicken wings.
I prepared 5 recipes all of which were very different and all of which everyone loved.

Devil Island Chicken Wings

When I started making these wings I knew Michelle would love them. They had two of her favourite wings ingredients; tomato and spice.

Needless to say I really liked these too and as a result, I’m starting to fall in love with oven baked wings.

The ingredients for this dish are:

olive oil
onion
garlic
jalapeno pepper
fresh ginger
chilli
paprika
cayenne pepper
red wine vinegar
Ketchup
hot sauce
dijon mustard

Step 1: Preheat oven to 190C

In a saucepan over a medium heat saute onion, garlic, jalapeno for about 3min

add vinegar, ketchup, sugar, hot sauce and mustard and simmer for 5min

Step 4:
Remove from heat and cool for 10mins

Place wings in the sauce and cover completely

Place wings cover in sauce in the oven for 25-35min until cooked through

Hot Wings – (As seen on TV)

I was lucky enough to be invited to cook for Karl, Georgie and Lisa on the Morning Today Show on Channel 9

The wings were very very spicy as you’ll see in this video.

Lucifer Wings

Here is another great BBQ marinade for wings.
These require 24 hours of marinade time, I actually did mine for 24hours in the fridge and then froze them for another day before cooking.

Looking at all these ingredients you would think there would be a big punching coming, when actually it was really well balanced wing.

Step 1 - All you have to do for this recipe is place everything below in a container or plastic bag.

Step 2 – Leave for at least 24 hours
Step 3 – Take out the fridge and leave until they back to room temperature

I really liked these wings, at first the lemon kick had me confused but then the chilli comes through and makes for a beautiful combination of flavours.

Rub-A-Dub-Dub Wings

These bad boys took me by surprise. At first I thought the cinnamon flavour would completely over power all the other ingredients but I was completely wrong.

It turns out the below combination of spices really makes for a unique flavour one that I would highly recommend you try.
