Blue Monday Wings

Once Upon a Monday night I was feeling blue so I cheered myself up by cooking these wings and no I was not naked…

Ingredients:

wings, mustard, flour, Cornmeal,onion powder, garlic powder, lime juice, black pepper, ground cumin, cayenne pepper

Down-Home Wings

My second recipe since “time-off-cooking-wings”, and I say these are not for the faint hearted.
They pack a serious mustard punch…

Ingredients:

mustard, mayonnaise, dried thyme, dried dill, cayenne pepper, black pepper, onion powder, wings

Christmas Special

Christmas day was really special for me last year, I had loved ones all around me, and despite the rain we still cooked loads of chicken wings.
I prepared 5 recipes all of which were very different and all of which everyone loved.

Jim’s Buffalo chicken buffalo Wings

Another buffalo wing recipe and no surprise it was amazing.
This particular recipe won the Secret Sauce Recipe at the national buffalo wing festival in 2002 under the traditional category so I knew they would be good.

The ingredients for this dish are:

Franks Hot Sauce
black pepper
salt
white vinegar
dried chives

Step 1: In a saucepan, over a high heat pour in the Franks, butter, chives, salt and pepper stirring all the time.

Step 2: Simmer the sauce for 3mins

Step 3: Deep fry you chicken wings for 10-12min at 190C until cooked

Step 4: Remove the wings and drain so they no covered in oil.
Step 5: Place the wings in the sauce and make sure they are completely covered.

Jalapeno Dip

This is a beautiful dip that has a lovely creaminess to it but packs the kick of those beautiful fresh Jalapenos.

Here are all the ingredients for this easy dip:

black pepper

The best part about it is that there is only 1 step.

Mix everything together :-)

Corny Corn Wings

It was bound to happen someday that I would come across a wing that I didn’t like. This is the one. That being said I still ate all of them.
I found the molasses was too strong and the whole recipe just lacked the full combination of flavours.
The smell was not something that I could not handle.
Extra from my journal when making these reads:
“Smells horrible looks horrible I hope this works”

Step 1:Combine the everything except the flour and wings into a blender.

Step 2: lightly flour the wings, then dip them into the blended mixture

Step 3: Put them into a pre-heated oven at 200C for about 40mins

I was lucky enough to be invited to cook for Karl, Georgie and Lisa on the Morning Today Show on Channel 9

The wings were very very spicy as you’ll see in this video.

Making Flavoured Butters

Learning how to make flavoured butter is not difficult and could ultimately change the way you use butter with food in the future.

It’s pretty straight forward really, all you do is soften some butter (DO NOT MELT) and then mix in whatever herbs and spice you like. Lastly you roll the butter in the clingfilm and put it in the freezer.
Then whenever you need some flavour added to a dish simply cut off a little section and melt with whatever it is you making.

Johnny Appleseed wings

I’ve never cooked with A1 sauce before and only tasted it once in NYC, so I was excited about this marinade.

Step 1 - Place everything other than the wings into a pan and saute for 5-10mins

Step 2 – Place all the ingriedents along with the wings in a container or plastic bag

Step 4 – Take out the fridge and leave until they back to room temperature
Step 5 – Cook on a medium heated grill or BBQ

These wings had a beautiful deep flavour and I think the combination of cidar and steak sauce really work well together. I’m probably going to try and modify this recipe and use it for ribs so watch this space.

Lucifer Wings

Here is another great BBQ marinade for wings.
These require 24 hours of marinade time, I actually did mine for 24hours in the fridge and then froze them for another day before cooking.

Looking at all these ingredients you would think there would be a big punching coming, when actually it was really well balanced wing.

Step 1 - All you have to do for this recipe is place everything below in a container or plastic bag.

I really liked these wings, at first the lemon kick had me confused but then the chilli comes through and makes for a beautiful combination of flavours.
