Blue Plate – all you can eat wings

I was very excited when my girlfriend bought us some vouchers for all you can eat wings…
That’s right 1.5 hours of time allocated for eating as many buffalo wings as you like.
Don’t get me wrong I wasn’t planning to take on Joey Chestnuts world record. FYI it’s 191 wings in 12minutes

The venue was set for the Blue Plate – Bar and Grill.

I looked over the menu the night before (with no intention of eating anything but wings) , and it got me excited because they had some good hearty American meals, and this was a sign of good original wings to come.

The evening started with a Boston Larger on the house and our first order of wings.

I was nervous about the wings not being hot or crispy or us running out of time…

None of the above happened.
The wings (perhaps not the first 2kgs) were very crispy, in fact by our 8th bucket they were so crispy I was heaven.
They had just the right amount of spice and butter too.

We even went as far as to try our their homemade BBQ wings.
They were very good, but I had to go back to original due to the former being rich and sweet.

As you can see we all ate to our heats content. The vegetables didn’t get a lot of attention as to be expected ;-)

To top things off the service was really great, the manager spent time chatting to us, making sure we had everything we wanted and got into some American beer conversations too.

We managed 8 buckets of wings totaling 8kgs. I had a goal of 25 wings and manged 27 in the end…

Sierra’s Grandma’s Secret Wings

Here is another great recipe that has also come in first at the National Buffalo Wing Festival. This time it was in the Creative category.

These are beautiful tasty and moreish and I highly recommend making them…

The ingredients are as follows:

wings
veg oil
Butter
sugar
Ketchup
garlic
onion powder
white pepper
salt
chilli
dried oregano
beer
Franks Hot Sauce

Step 1: Heat the oil to 190C, and cook the wings for 10-12min until crispy

Step 2: Melt the butter and sugar over a medium heated stove
Step 3: Add the remainder of the ingredients and bring to a boil, then simmer for 2-3mins.

Step 4: Don’t be shy and pour all the sauce over the crispy wings…

Where’s my John Wayne Wings

Ok so I lied the Spicy Chicken wings weren’t the last in the old house, these were, I guess I just needed more wings ?

Ingredients

Wings
veg oil
onion
garlic
sugar
apple cider vinegar
Worcestershire Sauce
mustard
chile powder
onion powder
garlic powder
jalapeno chile

Step 1: Preheat the oven to 190-200C
Step 2: In a large skillet brown the wings over a medium heat on the stove top.
Step 3: Remove the wings from the skillet and place aside
Step 4: Add onion, garlic to the skillet and brown for 3minutes

Step 5: Stir in the ketchup, sugar, vinegar, Worcestershire, mustard and spices and cook for about 10mins

Step 6: Add the wings to the mixture above and stir well
Step 7: Place the wings in to the oven and bake for 10mins until the sauce thickens.

Spicy Chicken wings

We moving house and these are the last wings I’ll cook at my current address so it’s sort of good bye and thank you to this kitchen.

Ingredients:

Wings
veg oil
soy sauce
olive oil
fresh rosemary
garlic Powder
fresh lemon juice
cayenne pepper
Worcestershire sauce
Hot Sauce

Step1: Brown the wings over a medium heat a skillet for 10-12minutes.
Step2: Place all the other ingredients into a large mixing bowl and whisk well.

Sweet ‘n’ Spicy wings

Yummy, is the only way to describe these bad boys.
The flavour is complex and beautiful and has the perfect balance of heat and sweet ?
Another thing to love about this recipe is that it’s only 3 steps so perfect for having when friends are around…

Frank’s Hot Sauce
Butter
Orange Juice
Honey
cinnamon
ground allspice

Kentucky Style Wings

When I first saw the name of this recipe I thought it would be a battered recipe, but was surprised to see it was a deep-fried recipe(my fav) with a sauce that incorporated bourbon, how could you go wrong…

Ingredients:

Wings
Veg oil
unsalted butter
Frank’s Hot Sauce
pancake syrup
bourbon

Step 1: Preheat oil to 190C
Step 2: Cook the wings in the oil for 10-12mins until super crispy
Step 3: Combine all the ingredients in a bowl and mix well

Step 4: Once the chicken is cooked place in the bowl with mixture and toss until completely coated.

Christmas Special

Christmas day was really special for me last year, I had loved ones all around me, and despite the rain we still cooked loads of chicken wings.
I prepared 5 recipes all of which were very different and all of which everyone loved.

Shanghai Red wings

These were the first wings that I cooked for my parents just before Christmas. I didn’t get many pictures taken because I was too excited about serving Mom and Dad some great wings.

Soy Sauce
Honey
peanut oil
Frank’s Hot Sauce

Jim’s Buffalo chicken buffalo Wings

Another buffalo wing recipe and no surprise it was amazing.
This particular recipe won the Secret Sauce Recipe at the national buffalo wing festival in 2002 under the traditional category so I knew they would be good.

The ingredients for this dish are:

Franks Hot Sauce
black pepper
salt
white vinegar
dried chives

Step 1: In a saucepan, over a high heat pour in the Franks, butter, chives, salt and pepper stirring all the time.

Step 2: Simmer the sauce for 3mins

Step 3: Deep fry you chicken wings for 10-12min at 190C until cooked

Step 4: Remove the wings and drain so they no covered in oil.
Step 5: Place the wings in the sauce and make sure they are completely covered.

Diane loves wings

I haven’t cooked steak Diane before but this is how I would image it would go.
Obviously using steak instead of chicken.
The brandy burning was super fun and burnt for a lot longer than I thought it would so be careful when making this dish.

The ingredients for this dish are:

Step 1: In a skillet over a high flame cook the wings for 10-12mins until browned and cooked through

Step 3: Splash the wings with brandy, Ignite and let it flame for a few minutes
Step 4: Once the flame is out simmer for 3mins
Step 5: Remove the wings from the sauce and set aside

Step 6: Add butter, mustard, Worcestershire sauce and chicken stock, simmer for a few minutes until smooth

Step 7: Server wings with the beautiful rich Diane Sauce.

Despite the appearance this dish not being great I really liked the final outcome.
